Lately, I’ve been trying to take a stab at baking top 8 free. Dang guys is it tough! Trying to bake eggless or using all these crazy flours out there is like mad science. As much as I would really really love to be presenting you with a top 8 free spiced cookie today, my kitchen wizardry is just not there yet. And honestly, I will leave that up to the pros who aren’t afraid to play with tapioca flour and the such.
Instead, I present a lightly spiced cookie. These coriander ginger cookies are more like a biscuit than a cookie because they aren’t chewy and gooey. This recipe was originally developed to find the perfect sandwiching cookie for vanilla ice cream and has since found new life sandwiching cream cheese or chocolate spread or just dipped in a little chocolate. This cookie is a blank slate. How you choose to eat your batch of coriander ginger cookies is up to you and what delicious things you have in your kitchen!
Coriander Ginger Cookies: Sugar-Free
Coriander ginger cookies can be sugar-free if you are lucky enough to get your hands on some pure crystallised ginger. When we were in Sydney, we tried the most amazing crystallised ginger at a farmer’s market and were in shock that it contained zero added sugar. It was both super spicy and sweet! Finding crystallised ginger without added sugar has been impossible in Berlin. I’ve gone with a brand that contains cane sugar, which is what I used to develop this recipe. If you can find the proper stuff, then this recipe will be sugar-free! You just need to make sure that the kind you use creates a sticky paste for the recipe to work.
These cookies are a great addition to any summer party and although I haven’t tried this yet I bet they would make excellent s’mores!
