Easy crunchy chickpeas, a nut replacement for food allergy people

A salad full of nuts seems like the worst thing to eat on this planet! Ok, let me clarify, it would send me straight to the hospital with anaphylactic shock. So you can see why I never really understood the deal with nuts. Why are people so crazy about them as a snack and in salads? Well, let me just say if they are anything like these crunchy chickpeas, I can understand. 🙂 

An extra crunch is a welcome addition to any salad and crunchy chickpeas just upped my salad game. They are also an awesome snack when you want a quick hit of protein. They are a peanut & soy allergy gals new best friend.

Easy crunchy chickpeas

I experimented with a couple of recipes and found them to be ok. The texture wasn’t my favourite. I was going to give up on the idea of crunchy chickpeas, but one day I really wanted a snack and just happened to have a can of chickpeas in my cupboard. I didn’t want the extra fat from oil and decided to try and bake them without it. Et voilà, I got this fabulous spicy oil-free alternative. Without oil, they get a satisfying crunch that I didn’t get in the other recipes. And keeping them in the oven as it cools gives them a nice bite.

This recipe is super easy. You just need chickpeas and any spices you are feeling that day. I like to make them spicy with a chili and cayenne combo. Cumin and cayenne are also a yummy alternative. The best thing about this recipe is it can be up to you and what flavour combos you prefer.

Crunchy Chickpeas

Crunchy chickpeas are great in a salad or as a quick protein filled snack.

Ingredients

  • 2 cans of chickpeas (2 x 425g can)
  • 1-2 tsp chili powder
  • 1 tsp cayenne pepper
  • Pinch of salt

Instructions

  1. Preheat oven at 225°C or 480°F
  2. Strain, rinse and dry the chickpeas.
  3. Mix the chickpeas with the spices and salt. The amount of spices you use depends on how spicy you want it.
  4. Spread the chickpeas evenly on a non-stick tray or a tray lined with parchment paper.
  5. Bake the chickpeas for 35 minutes. Turn off the oven and leave them in for 20 minutes to an hour depending on how crunchy you want them.
