Guess who is defending Canada in AccorHotels #FoodieMadness? This gal! And what an honour it is to be competing for Canada on our big 150th birthday year.
#FoodieMadness is a food competition between 16 international bloggers hosted by AccorHotels. We each have to present a recipe that showcases our country’s food culture or history. Then our recipe goes head to head with another country, and the winner moves on to the next round. The prize is a trip to Singapore in November!
I’m facing Senegal in round one.
To represent Canada I have put a twist on a classic, the butter tart! I was debating on doing the Nanaimo bar or a crazy fusion of the butter tart and Nanaimo bar, but the butter tart ultimately won. One of my summer jobs in college was to bake butter tarts for a country club (along with nut-free carrot cake), so feeling nostalgic I went for the tart instead of the bar.
To put my spin on this classic Canadian treat, I made it double chocolate and refined sugar-free! As much as I love butter tarts, I find them sickly sweet. Adding in the bitterness of cocoa to the pastry and using natural sugars like coconut sugar and maple syrup rounded out the flavours so that it isn’t just sweetness, rather it becomes a chocolatey-gooey-caramelly-flaky tart.
