I love Thanksgiving dinner because of all the delicious side dishes you only seem to get when turkey is served. And at Casa Kwong Hing we take our sides very seriously. So much so that on our table, you will always find two kinds of mash: the traditional creamy mashed potato and sweet potato mash with caramelised onions. Why so much mash?

Inventing the sweet potato mash

Like me, my dad has developed a lot of food allergies with age, one being potatoes. Mashed potatoes were always a highlight of the holidays, but all of a sudden we needed to find a delicious alternative. That’s when sweet potato mash with caramelised onions was invented. And lets just say, we didn’t miss regular potatoes one bit that Thanksgiving.

Now we rarely serve traditional mash because we’ve all become sweet potato lovers. Sweet potato mash with caramelised onions brings a sophisticated edginess to the dinner table (um hm). It combines the sweetness of roasted sweet potato with the richness of the caramelised onions and brightness of rosemary.

Sweet Potato Mash with Caramelised Onion

Ingredients

  • 3 medium Sweet Potatoes - cut in half lengthwise (roughly 20cm by 7cm)
  • 1/2 large White Onion - thinly sliced (approximately 2 cups)
  • 2 tbsp Olive Oil
  • 1.5 tsp Fresh Rosemary - finely chopped and divided into 1 tsp and 0.5 tsp
  • 1 tbsp Balsamic Vinegar
  • Salt and pepper to taste

Instructions

  1. Wrap sweet potato pairs in tin foil and bake at 475° for 30-35 minutes, until soft.
  2. In a large pan or wok add onions and olive oil. Cook over medium-high heat. You want to continuously stir the onions, so they do not burn. When the onions are starting to soften, add 1 tsp of rosemary and balsamic vinegar. Turn the heat to medium and continue to stir the onions until they are caramelised, around 20 minutes. The onions will have halved in quantity and be slightly sticky. Take off heat and set aside.
  3. When the potatoes are done, remove flesh from skin and place in a large bowl. Mash the potatoes using a fork.
  4. Mix the caramelised onions and remaining rosemary into the sweet potatoes. If the mash feels dry, add a little more olive oil.
  5. Add salt and pepper to taste.
